White Chocolate Macadamia Nut Scones

Scones. They are heavenly to bake. The smell of rich European butter, sugar, and fresh dough will fill your home and you will wonder what you were ever doing with yourself before you made them.

 

You’ll find that scones are a real treat to prepare. This recipe leaves the scones bursting with white chocolate chips, macadamia nuts, and just the right amount of buttery sweetness in the dough.

INGREDIENTS

  • 1 ½ cup all-purpose flour
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 6 tbsp cold, high-quality butter (European if possible)
  • 1/3 cup buttermilk
  • 1 large egg yold
  • ½ tsp vanilla extract
  • ½ macadamia nuts
  • ½ cup white chocolate chips
  • For the sugar glaze: 1/3 cup water and 3 tbsp sugar

INSTRUCTIONS

Preheat to 450.

In a large bowl, use a fork to mix together the flour, sugar, baking powder, baking soda, and salt.

Dice the cold butter into small pieces and “cut” it into the flour mixture.

There are many online tutorials about how to perform this technique, but I use two forks chop the butter into the dry ingredients.

 The goal is to get microscopic, cold butter particles in between all of the dry ingredients. The end result will look like cornmeal (see below).

Next, in a separate bowl, whisk together the egg yolk, buttermilk, and vanilla.

Pour it into the flour-butter mixture and stir to create the dough. Knead in the white chocolate chips and macadamia nuts.

Dust a surface with flour and knead the dough into a 1” thick disc. Slice into 8 triangles and place on a lined baking sheet.

In the microwave, heat 1/3 cup of water until almost boiling, and stir in 3 tbsp of sugar to create a simple syrup. Brush the unbaked scones with the syrup and sprinkle a little granulated sugar on each scone before baking. This will make them sparkle later.

Bake for 12 minutes, until golden brown on top.

These are heavenly. The unique ingredients of white-chocolate macadamia nut cookies are transformed into beautiful,  fluffy scones, leaving you with an amazing treat for breakfast, lunch, or dinner.
